1. Chicken Parmesan

Turn a classic chicken breast recipe into a heart-healthy meal made with crispy baked chicken and melted part-skim mozzarella. This recipe is also low in sodium and diabetic-friendly.

Ingredients

(Yield: 4 servings)

  • 2 teaspoons olive oil
  • ½ onion, chopped
  • 1 garlic clove, minced
  • ½ cup tomato sauce
  • 1 teaspoon chopped fresh basil
  • Black pepper, to taste
  • 1 egg, lightly beaten
  • ¼ cup whole-wheat Italian breadcrumbs
  • 4 boneless, skinless chicken breasts, 4 ounces each, pounded
  • ½ cup shredded part-skim mozzarella cheese
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F. Lightly coat a baking sheet with nonstick cooking spray.
  2. In a small saucepan, heat the olive oil over medium-high heat. Add the onion and sauté for 2 minutes.
  3. Add the garlic and sauté for 30 seconds.
  4. Add the tomato sauce, basil, and black pepper. Reduce the heat to low and cook, stirring occasionally, for 15 minutes. Remove from the heat and set aside.
  5. Place the egg and breadcrumbs in separate shallow bowls. Dip the chicken breasts into the egg, then coat them with the breadcrumbs.
  6. Arrange the chicken breasts on the baking sheet. Bake for 20 to 25 minutes.
  7. Spread half of the tomato sauce in a casserole dish. Place the baked chicken over the sauce and spread the remaining sauce over the chicken.
  8. Sprinkle the mozzarella and Parmesan over the chicken. Cover with foil and bake for an additional 3 to 5 minutes, or until the cheese is melted.

  • 3 tablespoons balsamic vinaigrette
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, combine the cooked and cooled quinoa, arugula, onion, tomato, and balsamic vinaigrette.
  2. Season with salt and pepper. Gently toss and set aside.
  3. Season the salmon fillets with salt and pepper.
  4. In a skillet, heat the olive oil over medium heat. Place the salmon in the skillet and cook for 4 minutes, undisturbed, until golden brown and crispy.
  5. Flip the fillets and cook for another 3 to 4 minutes, or until the fish feels firm to the touch.
  6. Transfer the salmon to a plate and allow it to cool.
  7. Once cooled, break the salmon into pieces using a fork and toss it into the quinoa salad.
  8. Squeeze fresh lemon juice over the salad, if desired. Serve and enjoy.
